Ingredients

  • 1 8-12 inch hoagie roll (or ciabatta roll), split

  • 4 slices deli ham

  • 4 slices Genoa salami

  • 4 slices pepperoni

  • 2 slices provolone cheese

  • 1/4 red onion, finely chopped

  • 3 pepperoncini peppers, sliced

  • 1 small tomato, diced

  • 3/4 cup shredded romaine or iceberg lettuce

  • 2 tablespoons mayo, plus more for bread 

  • 1 tbsp red wine vinegar

  • Salt and freshly cracked black pepper, to taste

  • 1 tbsp infused olive oil (low dose/50mg per tablespoon) (optional)

Instructions

  1. Toast the Bread:
    Split the hoagie roll,  spread as thin layer of mayo and toast it lightly under a broiler or in a toaster oven until just golden.

  2. Chop & Mix the Filling:
    On a large cutting board, pile the ham, salami, pepperoni, cheese, red onion, pepperoncini, tomato, and lettuce. Chop everything together into bite-sized pieces using a chef’s knife.

  3. Season It Up:
    Drizzle the chopped mixture with red wine vinegar and add in mayo to your liking.  Season with salt and black pepper. Add in your optional infused olive oil if using and toss everything together gently right on the board.

  4. Build the Sandwich:
    Place chopped mixture on both sides of the bread and fold together. Wrap and mold with plastic wrap to keep it clean and together.
